LC PGI White Asparagus of Navarre
Ingredients: Asparagus, water, salt, and acidity regulator: citric acid.
Description: ready to eat. 9/12 Whole white spears, thick (11-14mm) pieces, fibre-free, tender and delicate.
White asparagus from Navarre, without fibres and with the characteristic mild bitterness of the Denomination. The climate and fertile soil of the Ribera Navarra del Ebro give them unique characteristics. They are prepared in the traditional way, blanching them before peeling so that the skin protects their properties and aromas.
La Catedral de Navarra started as a small jar sealing business dating back to the Spanish Civil War when soldiers’ families would preserve foods for their sons and daughters. Since then their aim has been to obtain the best vegetables and preserve their flavour in tact.

The Protected Geographical Indication (PGI)
The Esparrago de Navarra (asparagus of Navarre) has been protected by a Specific Designation since 1986 and the Protected Geographical Indication (PGI) since 2003.
These designations were created to protect the crops of the Ebro Riverbanks from productions from other origins and guarantee the end consumer compliance with strict quality standards.
Asparagus of Navarre is white in color, and smooth in texture, with no fibrousness. The perfect balance in the softness of its bitterness on the palate is due to the cold nights in the production area, the quality of the water, and the farming systems used to obtain it.
Each stalk must be unearthed and cut by hand.
White asparagus is considered a delicacy in Europe.
